Pumpkin Pancakes
Prep Time:
Cook Time:
Servings: 3
Makes 6 large pancakes - serving size is 2 pancakes.
Ingredients
1 (15 oz) can organic pumpkin (or fresh and pureed)
6-8 eggs
3 tbsp coconut flour
1/2 tsp baking soda
1 pinch or to taste cinnamon
1 pinch or to taste orange zest
1 pinch or to taste freshly grated ginger
1 pinch or to taste cardamon
1/4 tsp vanilla
Directions
Mix all ingredients to form the pancake batter. Cook over medium heat using coconut oil or butter.

Epic juicing failure!
Surf and Turf Spring Salad
Prep Time: 10 minutes
Cook Time: 5-8 minutes
Servings: 3
tasty, beautiful, and satisfying, but not difficult. all organic/grassfed/wild ingredients assumed.
Ingredients
1 8 oz strip steak
12 medium shrimp
half a lemon, cut into 4 chunks
half a green pepper, cut into 4 chunks
2 handfuls of baby arugula
maybe a third of a fresh mango, sliced
fresh minced garlic, half a clove
half a teaspoon of raw honey
celtic sea salt to taste
2 skewers
extra virgin olive oil
Directions
make 2 skewers of: pepper--2 shrimp--lemon--2 shrimp--pepper--2 shrimp--lemon. put those and the steak (rubbed with salt) on the grill. neither of those things takes long to cook, but shrimp are very quick: 1-2 minutes each side.
put the arugula and the mango in a bowl. make dressing by smashing the minced garlic,salt, and honey with a fork and then whisking some olive oil and a little water in. you don't need a lot of dressing to coat those baby greens.
toss the salad with the dressing and rub the remainder on the grilled shrimp skewers.
slice the steak (against the grain!).
make the plate: salad on the bottom, 1 skewer and half the sliced steak for each. squeeze the grilled lemon over yours before eating.
a nice mix of flavors for a sunny spring lunch! hope you like it. :)

Happy wrap weekend!
Pumpkin, Apple, Bacon and Chive Biscuit
Prep Time: 15-20 min
Cook Time: 20-25
Servings: 4
For a great breakfast sandwich...scramble some eggs and fry some bacon...be creative!
Ingredients
3/4 cups coconut flour
1 tsp baking soda
1/4 tsp sea salt
1/2 cup coconut oil
1/2 cup fresh roasted pumpkin puree (butternut squash, acorn squash...)
3-4 Tbls Tbls coconut milk (depending on the moisture content of the squash)
3 organic/pastured eggs
1/4 green onions chopped, thinly sliced
1/4 cup very finely chopped tart apples
1/4 cup bacon pieces (pastured bacon, turkey or turkey bacon, I like Applegate Farms)
If dairy is an option for you, 1/2 cup of cheddar cheese would be awesome...
Directions
Preheat oven to 350 degrees F. Grease or line a baking sheet with parchment.
Combine coconut flour, baking soda and salt.
In a separate bowl combine the oil, pumpkin, eggs and beat till smooth
Add the flour mixture, bacon, apples and chives (cheese optional) to the egg mixture. Mix all the ingredients until well combined. Be sure the coconut flour is completely mixed in with no lumps) The batter should not be too thick and pasty but still able to hold together in a nice mound. Add more liquid if needed as it may vary depending on the texture of the pumpkin
Drop large spoonfuls of batter onto the prepared baking sheet.
Use about 1/8 of a cup for a smaller biscuit. Makes 8-10 or...
Use about 1/4 of cup for a larger biscuit. Makes about 4-5.
Bake for about 20-25 min or until slightly golden. Do not over bake of they will be dry. Best eaten same day or while still warm.
Opened faced egg & bacon
Prep Time: 5 minutes or less
Cook Time: 5 minutes or less

A super easy and satisfying breakfast sandwich. I enjoyed mine with a glass of fruit and herb infused water.
Ingredients
2 organic eggs
2 slices nitrate/nitrite-free turkey bacon
1 slice Ezekiel 4:9 bread
1 teaspoon homemade butter, if desired
Directions
Slightly beat eggs with a little water and fry as you would for an omelet.
Meanwhile, toast bread and fry bacon.
Butter toast and top with egg and bacon.
Enjoy!

Chicken Itailian Sausage and Shredded Zucchini Stuffed Steak

Cook Time: 35 min
Servings: 8
flavorful Meat stuffed with flavorful meat! (And shhhhhhhh there's veggies in there but they'll never know)
Ingredients
MARINADE:
1 clove garlic,pressed
2 Tbsp red wine vinegar
1 tsp worchestershire sauce
1 cup organic tomato sauce
1/4 tsp pepper
2 Tbsp olive oil
ZUCCHINNI STUFFING:
1/2 lb Organic Chicken Italian Sausage hot or mild
1 onion, chopped
1 Zucchini, shredded
1/3 cup fresh swg bread crumbs
1/4 tsp salt
1 cup organic Tomato sauce (for simmering)
1/2 cup water
1tsp dried oregano
1tsp dried basil
1 1/2 lbs Flank Steak
Directions
Pound steak with mallet to tenderize and flatten.
Combine marinade ingredients. Spread 1/2 of the mixture in a rectangular dish. Place steak in marinade, Cover, refrigerate for at least 2 hours. (I leave it over night) Reserve the other half of the marinade for cooking.
Cook Sausage in skillet for 5 min. Stir to break up.
Add onion, cook 5 mins or until onions are clear. Stir in Zucchini and cook another 2 mins.
Remove from heat. Stir in bread crumbs and salt. (I use sea salt). Add 2 tablespoons of marinade.
Scrape marinade off steak. Spread stuffing to within 1 inch of the edge. Roll up tightly and secure with toothpicks or tie with string.
Brown in dutch oven or Heavy pot. Pour marinade and remaining tomato sauce over. Add water, basil, and oregano.
Simmer slowly for about 35 mins.
Transfer meat to a platter cut into slices

Salmon sandwich

This sandwich is delectable. End of story.
Ingredients
3 oz of wild caught salmon, raw or cooked and seasoned how you like
1 oz of full fat Greek yogurt
2 slices of sprouted whole grain bread, lightly toasted (important!)
1 oz of organic avocado, mashed or sliced
A dash of cayenne pepper
A dash of garlic powder
A dash of mesquite seasoning or chipotle powder
A dash of sea salt
A dash of black pepper
1 tsp of mustard
Directions
Step 1: Toast bread. Step 2: Mix together, mustard, Greek yogurt, cayenne pepper, garlic powder, and your choice of mesquite or chipotle. Step 3: Spread mixture evenly on both slices of toast. Step 4: Add salmon to one slice and avocado to the other slice. Step 5: Lightly salt and pepper avocado and close sandwich. Enjoy!

Breakfast almond butter muffins

Cook Time: 20 min
Servings: 8
These muffins taste delicious with some peanut butter!
Ingredients
1 1/2 cups almond flour
1/2 cup oats
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1 teaspoon cinnamon
3 tablespoons coconut oil
1/4 cup honey
1 egg
1/2 cup almond milk
2 mashed bananas
2 apples, peeled and grated
Directions
Preheat oven to 350ΒΊF. Line a muffin tin with foil liners.
Combine almond flour, oats, baking powder, baking soda, salt, and cinnamon in a bowl. Stir until well combined.
In a large bowl, combine coconut oil, honey, egg, almond milk, mashed bananas, and grated apple. Mix well (I used a whisk).
Add the flour mixture to the wet mixture a little bit at a time; stirring after each addition.
Pour batter into muffin cups, filling each 3/4 of the way. Bake for 20 minutes, until a toothpick inserted in the center of a muffin comes out clean.

I'm sure we've all enjoyed our fair share of French bread pizza in my house.......Introducing our new fave......Zucchini Pizza! My kiddos love it!
Ingredients
4 small zucchini
1/4 cup raw mozzerella
olive oil
1/2 tsp Crushed Garlic
sea salt and pepper to taste
1/4 tsp parsley or basil or both
2 small roma tomatoes
1/2 tsp home made ezekiel bread crumbs
Directions
Cut the zucchini in half lengthwise, Scoop out the center where the seeds are with a spoon.
Brush the surface with a mixture of crushed garlic, olive oil, salt and pepper
Arrange sliced tomatoes into the grooves, sprinkle with bread crumbs and bake in a 350 degree oven for about 30 minutes
Remove and place diced or shredded mozzarella in between the tomatoes, place them back in, but now under the broiler til golden and bubbling
Remove and Sprinkle with Parsley or basil or both! You will love this as a side dish OR a meal!
A serving is both halves of one Zucchini.
Motivated!
What motivated me to finally do this? Well I found this company called It works and we sell the popular and famous SKINNY WRAPS! Yes! I love these things because you lose weight and it happens fast, AND it will stay off as long as you are not eating badly or gaining weight! So with that being said, if you are interested in that let me know! $30 for a wrap and 2 for $50! :)
So far I do Zumba in the morning 20 minutes and Insanity at night. Of course with my kids being home Zumba sometimes don't happen but I still workout somehow. I want to always workout some way some how. I am also changing my way of eating. Trying to stay within a 1300 calorie plan, but sometimes i go over WHATEVER! lol No fried food or sugar...well maybe on my cheat meal with the sugar. Look, I find that when you totally deprive yourself and then don't see results then you give up. Hey you can't gain weight from one bad meal just like you can't lose weight from one healthy meal. So don't feel badly if you have one bad meal a week! But if you're doing something different then hey that's great! Different strokes for different folks! Also I've been told that we shouldn't count calories...but if that's what is working for you do it! Just know there's a difference between the good calories and the bad!
I am also going to post scriptures because GOD is and will always be amazingly there for me during this journey of mines. I have created many of blogs, and I pray that this one will be the most motivating to most and Inspiring to others!
